Parsley Garlic Ribbons with Garbanzos, Olives and Artichokes

  • 2 packages Eden Organic Parsley Garlic Ribbons
  • 1/4 cup Eden Selected Extra Virgin Olive Oil
  • 1/4 tsp red pepper flakes, or to taste
  • 1 cup onion, diced
  • 6 cloves garlic, diced
  • 1 cup artichoke hearts, packed in water, quartered
  • 1 medium yellow pepper, chopped
  • 2 cups organic vegetable broth
  • 1 cup pitted black olives, whole
  • 1 can Eden Organic Garbanzo Beans, drained
  • 1 can Eden Organic Whole Tomatoes with Basil, chopped
  • 1/2 tsp Eden Sea Salt
  • Freshly ground black pepper
  • 1 TBSP fresh parsley, minced


Cook pasta according to directions until al dente. While the pasta is cooking place olive oil, red pepper flakes and onions in a large skillet and sauté on medium until golden. Add garlic, artichokes and yellow pepper, sauté until just browned. Add broth, olives, garbanzos and tomatoes. Gently simmer 5 minutes. Place drained pasta in a large bowl, pour sauce over and toss.
