Kamut® Vegetable Spiral Curry

2 TBSP Eden Selected Extra Virgin Olive Oil
3 cloves garlic, minced
3/4 cup onion, diced
1/2 cup button mushrooms, sliced
2 small organic potatoes, peeled and diced
2 1/2 cups water
1/3 cup celery, diced
1 cup carrots, diced
3/4 tsp Eden Sea Salt
2 2/3 TBSP organic unbleached white flour
2 cups Edensoy® Unsweetened
1 1/2 tsp curry powder
1/2 tsp turmeric
1/2 tsp coriander
1/4 tsp cumin
1/4 tsp cinnamon
1 pinch cayenne pepper
1 package Eden Organic Kamut Vegetable Spirals
1 cup zucchini, sliced into half moons


Heat oil in a large skillet, sauté the garlic and onion 5 minutes until slightly browned. Add mushrooms and sauté 2 minutes. Add potatoes, water, celery, carrots and sea salt. Cover, bring to a boil, simmer 10 minutes. Place the flour in a bowl. Add a little Edensoy and mix until the flour dissolves. Add remaining Edensoy and mix. Slowly add the Edensoy/flour mixture to the skillet, stirring frequently until sauce thickens. Add the spices, mix and simmer uncovered for 5 minutes. Meanwhile, cook pasta as package directs. Add the zucchini to the sauce and simmer 1 minute. Drain pasta and serve with curry sauce.
