Kamut® Elbow Hoppin' John

1 package Eden Organic Kamut Elbows
1 TBSP Eden Selected Extra Virgin Olive Oil
1 medium onion, chopped
3 cloves garlic, chopped
1 green bell pepper, seeded and chopped
1 can Eden Organic Diced Tomatoes with Green Chilies, drained
2 cans Eden Organic Black Eyed Peas, drained
1 tsp Eden Organic Apple Cider Vinegar
3 tsp chopped fresh cilantro, or 1 tsp dried cilantro
2 cups kale, stemmed and chopped
Eden Sea Salt
Freshly ground black pepper


Cook pasta according to package directions; drain. Heat oil over medium heat, sauté onion, garlic and pepper until softened, about 3 minutes. Add tomatoes and simmer 10 minutes. Stir occasionally. Add the black eyed peas, kale, vinegar and cilantro. Cover and simmer 5 minutes more. Season with salt and black pepper. Toss gently with cooked pasta and serve.
